On Thursday, September 25th, ORO takes you to Italy’s northern frontier, TRENTINO-ALTO ADIGE, where the steep slopes of the Dolomite Mountains rise above serene lakes, shelter dense forests, and fertile valleys.
Here, food tells a story of cultural crossroads, where Austrian influence is reflected in a cuisine shaped by altitude, heritage, and bold flavours.

Traditional bread dumplings filled with speck, fontina, and fresh herbs, served in a rich mushroom and Parmesan broth with charred honey-garlic cabbage
Ravioli di Barbabietola Rosa
Beetroot and mascarpone ravioli served in a sage-infused brown butter and a sprinkling of poppy seeds
Spaetzl di Funghi e Milanese di Maiale
Breaded and fried pork cutlet served with apple cream, spaetzle, sautéed mushrooms, and fresh greens
